As promised, here's a homemade dish that's easy to follow. It is a dish that is commonly found in Malaysian Chinese households and it serves 6. The preparation should take half an hour, but the cooking is very fast at just approximately 20 minutes.
Ingredients
===========
600g of chicken, bones removed, cut into cubes
4 tablespoon of preserved black beans
2 tablespoon of cooking oil
1 tablespoon of sugar
2 red chillies and green chillies respectively, with seeds removed and cut into squares
1 small carrot, cut into little flower shapes
50g of ginger shreds
5g of chopped garlic
4 spring onion stalks, cut into 1 inch lengths
2 tablespoons of oyster sauce
1 teaspoon of thick soy sauce
You'll also need to have seasoning to marinate the chicken later on.
Seasoning Ingredients
======================
1 tablespoon of light soy sauce
1 tablespoon of corn flour
1 teaspoon of sugar
half a teaspoon of pepper
a quarter cup of water
Instructions
Marinate the chicken with seasoning for 10 minutes.
Boil half a cup of water in a wok and scald the seasoned chicken pieces until they are half-cooked. Then, drain the water.
Clean the wok. Then, heat 2 tablespoons of oil. When the oil is heated, fry the ginger and garlic pieces till they give out a fragrant aroma. At this point, add in the chicken pieces, black beans and sugar. Stir the mixture well until all the chicken pieces are well coated.
Add in the chillies, carrots, oyster sauce and thick soy sauce. Then, stir fry the dish for a minute before serving it.
