Hearty Mediterranean Pasta

This delicious pasta dish is not only easy to make but can be prepared in less than 30 minutes. It's base ingredients go well with many types of meat or fish but is best with a spicy or mild italian sausage.

Ingredients:

3 Large Italian Sausages (mild or spicy)

1 Onion Diced
4 Cloves Garlic finely chopped

1 Can Diced Tomatoes
1 Small Can of Sliced Black Olives
1/3 cup of Extra Virgin Olive Oil
1 Can unmarinated Artichokes (optional)
Salt and pepper to taste.

1 Package of Fresh Tortellini

Begin by boiling a large pot of water and boil the italian sausage for about 5 minutes or until cooked. Once cooked, remove the sausages and let cool for a few minutes. Replace the water in the large pot, boil, then begin cooking the tortellini.

Slice the sausage into small 1/2 inch thick disks and place into a large frying pan and cook until golden brown on both sides. Remove the sausage and discard the grease.

In the same frying pan, sautee the onions and garlic until tender, then add the 1/2 cup of vermouth and boil until the vermouth has reduced by about one half. Add the can of chopped tomatoes, black olives, and 1/3 cup of olive oil. Cook for about 5 minutes then add the artichokes (should be quartered).

Finally, drain and add the tortelline and serve!
